The rush doesn’t make you - it exposes you

There's a thing that happens around 7:45 on a Friday when the tickets stop printing one at a time and start coming in waves.
Everybody finds out, all at once, what they actually prepped for.
The rush doesn't build a great line. It just shows you the one you already had.
The craziest one I ever lived through at the Lime Truck: 4,300 people in one hour. All four trucks on site. Tents pitched out front. Backups stacked on backups. It was genuinely insane — the kind of volume where the only question is whether your prep holds or your whole operation folds in real time, in front of everyone.
And here's what I learned standing in the middle of that: the days that broke us were never a talent problem. We had great cooks. The days that fell apart fell apart for the same boring reason every time — we under-prepped one station, and one bad handoff turned into a twenty-minute hole we never climbed out of. The day we did 4,300 in an hour didn't break us because we'd already decided, the day before, exactly where it would.
Here's the part most people get backwards. They think the busy weekend is about working harder during it.
It's the opposite. The weekend is won or lost in the 48 hours before it.

THE PLAYBOOK
3 moves before the door opens
1. Over-prep the choke point — not everything.
Find the one station that backs up first. It's the same one every time, and you already know which it is. Double its mise. You don't need 10% more of everything; you need 100% more of the thing that bottlenecks. Prep is not a volume decision, it's a targeting decision.
2. Pre-decide the 86 line.
Don't make "are we out?" a mid-rush call. Set the number before service: at X portions left, it's 86'd — no debate, no hero runs to the walk-in. You just removed an argument from the worst possible moment to be having one.
3. Clean the handoff.
Most blowups aren't a slow cook. They're a bad pass. Whoever's expediting calls it the same way all night, every night. The next cook should win because of how you left the station — not in spite of it. A clean handoff is the cheapest speed you'll ever buy.

Speaking of the handoff — I watched it happen in real life this weekend at Coni’Seafood in LA (epic spot, go if you're around).
Our server was a kid named Jordan. He just got into serving a few weeks ago and already got bumped up — and you could see why. The guy was alert. Locked into the room.
Here's the moment that got me. I asked him for more napkins. A new server runs straight to the station and straight back — two trips, two interruptions. Jordan didn't. He grabbed the napkins, then on his way over he ran the dish to the table next to us, and dropped our napkins off on the same pass. Napkins tucked in his back hand the whole time.
Nobody taught him to do that in a few weeks. He just thinks in combinations — how do I make one trip do two jobs.
That's move #3 from up top. The clean handoff. The cheapest speed there is. Some people grind to get faster; the great ones just stop making two trips.
Jordan — keep going, man. You've already got the thing that can't be taught.
